The name of the shop, “Maison de Parfait Juzen Jubi,” is derived from words meaning “flawless” and “perfect.” The play on words with “parfait” = “perfect” = “parfait” in French, which also means “complete,” inspired the choice of the shop’s name.
The ingredients, especially the “Shizuoka fruits,” are proactively sourced by directly visiting farmers within Shizuoka Prefecture and Atami City. They combine delicious seasonal fruits from all over the country.
This time, the order included the classic menu item “Citrus and Chocolate” and the seasonal limited “Seasonal Marriage.” At the counter seats, it’s possible to thoroughly watch the process of the parfaits being made.
The “Citrus and Chocolate” is a dish that catches the eye with French-produced Noir chocolate and green rosemary on top. As you dig in, you’ll enjoy the variety of textures from homemade gelato (Romarin), sansho and chocolate au lait mousse, blond chocolate croquant, cashew nuts, and streusel. The finale is a refreshing taste of chocolate cream, grapefruit, and white wine jelly.
The “Seasonal Marriage” begins with Tochigi Prefecture’s white strawberries “Milky Berry” and Shizuoka Prefecture’s strawberries “Kirapika,” including Shizuoka’s “Benihoppe” strawberries inside. Furthermore, it features jelly made with Shizuoka’s local sake “Atami no Hana” and kumquats from Shizuoka and Miyazaki Prefectures. Amidst the strawberry delight, homemade gelato with large green shiso leaves provides a nice accent, making it a seasonal specialty.
Although the parfaits at this shop are emphasized for their use of local ingredients and might be presumed to focus on fruit and acidity, trying them reveals a rich use of crispy mille-feuille, feuilletage, and plenty of sweet chocolate. This allows for the enjoyment of the quintessential sweetness of classic parfaits.
